What’s
Cooking? Another delicious recipe from the kitchen of one of our congregation. This time a scrumptious favourite from Marie Hayward. Do try it!. It’s a great quickie, especially if you have left- overs! Bubble and Squeak Ingredients:
8 large potatoes suitable for
mashing
Brussel
Sprouts left over preferably (If
not, then about 14-16 uncooked)
Carrots Left
over (If not then 3 uncooked) Method: ·
Peel and half the potatoes and boil until soft. (Watch
they do not overcook and become floury.) ·
Boil the carrots until very soft. ·
Boil the sprouts until very soft. ·
Strain and mash the potatoes with a knob of butter and a
little milk and finely chop the carrots and sprouts. ·
Take a large mixing bowl and put in all the ingredients
and mix together. ·
Take a large frying pan (deep sided preferably). Place all
the ingredients in the pan and pat down to form a large pancake and fork
the top in stripes. Place on a hot plate and cook until the contents begin
to rise and fall in the pan.(Slide
the pan gently from side to side to keep from sticking.) ·
Heat the grill and place the pan under it until the top is
crisp and brown. ·
Cut into pie-type slices and serve with H.P. sauce.
